After however many days of partial lockdown/quarantine (lost count) in San Francisco, I’ve still been cooking at home 98% of the time. On a few occasions, I picked up pizza slices to go and some dim sum. That’s about it, other than prepared foods at either Trader Joe’s or Whole Foods.
When I was younger, as in high school age, I used to fancy baking a bit. I was forever baking bundt cakes, coffee cakes, regular cakes or cookies. These days I’m not much of a baker, though think about it every so often. Something possessed me to buy bananas the other day. Those who know me would be aware that my fruit consumption when BUYING them fresh consists of pears, strawberries, watermelon, raspberries and honeydew. I can’t really eat cantaloupe any more, for some reason. I will eat bananas and pineapples IN other foods. I saw bananas at Trader Joe’s and had a sudden mad desire to make banana bread. Part of the reason for that might have been because bananas are dirt cheap!
After getting my bananas home, I had to look up a recipe for banana bread, never having made it before. Then, since I wanted to incorporate butterscotch into it, I ended up sort of combining two recipes. It was relatively easy to make, very moist and tastes delicious. I even made two batches, just to use up all of the bananas.
Here’s the recipe:
BUTTERSCOTCH BANANA BREAD
Servings: 6
Ingredients:
3 ripe bananas
1/3 cup butter, melted
½ cup brown sugar
1 egg, beaten
1 teaspoon vanilla extract
½ teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoon baking soda
Salt, to taste
1 ½ cups all-purpose flour
½ cup butterscotch chips
Directions:
- Preheat oven to 350.
- In a bowl, add the bananas & mash until smooth. Add in the melted butter & stir until well combined.
- Add the sugar, egg, vanilla, baking soda, salt & flour, & stir until the batter is smooth.
- Add in the butterscotch chips & pour the batter into a greased loaf pan. Top with additional butterscotch chips.
- Bake for 50 minutes to an hour, or until a toothpick comes out clean.
- Cool completely before serving.
